Put roasting pan pover two burners, medium heat. Remove giblets.
Deglaze with broth and wine whisking all the time.
Transfer to a fat separator and wash roasting pan.
Separate fat and add fat back to the roasting pan. Sprinkle in the flour whisking all the time, add the stock/wine, again whisking. Add ffresh herbs at the end.
Serve
Can use a thermos to keep warm.
